Our sheep milk cheese is produced between the months of March and September, according to the natural phase and seasonality with ewes lactation. Cheeses are matured for at least 6 months in temperature controlled room , to insure the best performance of the used starter culture bacteria.
Shelf life is minimum 3 months, after dispatch.
